There are basically two ways to slaughter livestock: stun slaughter and halal slaughter.
1、 Stunning slaughter: Using electric shock to immobilize livestock and then slaughtering them. Electric shock can cause the animal's heart to stop, but the brain can still feel pain for a long time, which has two drawbacks: 1. Cardiac arrest can leave blood in the animal's body that cannot be discharged, incomplete bleeding of meat is more fishy and prone to bacterial growth and spoilage. 2. Due to the lack of brain death in livestock, prolonged slaughter can still cause stress reactions and lead to the production of DFD meat (commonly known as black cut meat). The strong stress response leads to a decrease in glycogen in the body and a decrease in lactate content after death, with a pH greater than 6. 2、 Halal slaughter: refers to the use of a sharp blade to cut open blood vessels, trachea, and esophagus after physically restricting the movement space of livestock. This method can cause significant blood loss and loss of pain in a short period of time. This method releases blood completely and the meat is tender without any fishy smell.
